Vegan Onigiri - Japanese Stuffed Rice Balls

Sushi rice is not just for making sushi! Another cool way to use it is making Onigiri, aka Japanese stuffed rice balls. They are easy to make and are perfectly customizable.
Ingredients
Vegan, Gluten free
∙ Makes 30 balls

1/2 Avocado
1 Bell pepper, roasted
2 tbsp Cilantro
1/4 cup Edamame
1/2 tsp Ginger, fresh
1 sheet Nori
1 Scallion
Condiments
1 Lime, juice, zest
1 tbsp Miso paste
1 tbsp Peanut butter
Pasta & Grains
1 cup Sushi rice
Baking & Spices
2 tbsp Black sesame seeds
2 Salt
1 Sesame seeds, toasted
Nuts & Seeds
2 tbsp Walnut
