Vegan BLT salad

Vegan BLT salad is a meatless take on this classic sandwhich. It features homemade vegan bacon, roasted spuds and avocado. It's easy to make, filling and gluten-free too.

50 g Baby spinach
2 heads Gem lettuce., leaves
500 g Potatoes, new
1 Shallot
250 g Sweet cherry tomatoes
200 g Tempeh
Condiments
1 tbsp Capers
3 tbsp Lemon juice
1 tbsp Maple syrup
2 tbsp Tamari
2 tsp Wholegrain mustard
Baking & Spices
1 1/2 tsp Maple syrup or sugar
1 Salt and pepper
Oils & Vinegars
2 tbsp Apple cider vinegar
3 tbsp Olive oil, extra virgin
1 Olive oil
Other
¾ tsp smoky sweet (not hot) paprika or a few drops of liquid smoke
