Simple Roasted Red Pepper Pasta....With all the fresh burrata... This dinner needs to be a weekly staple, it's THAT good.
Ingredients

2 handfuls Arugula or watercress, fresh
1 bunch Basil, fresh
2 cloves Garlic
1/2 cup Sun-dried tomatoes, oil packed
Pasta & Grains
1 lb Short or long cut pasta
Baking & Spices
1 tsp Kosher salt
1 Pepper + crushed red pepper
1 (16 ounce) jar Red peppers, roasted
Nuts & Seeds
1/4 cup Almonds or pine nuts, toasted
1 Figs + toasted pine nuts, fresh

8 oz Buffalo mozzarella or burrata cheese, fresh
1/2 cup Parmesan, grated
