A quick and easy one pot pasta packed with nutritious greens and a thick, luxurious tomato & mascarpone sauce. Excellent midweek dinner!
Ingredients

2 cans (400g / 14oz each) canned chopped tomatoes with liquid, canned
3 handfuls Basil, fresh
5 Garlic cloves
1 Red onion, medium
250 g Spinach, fresh
1 Tblsp dried italian herbs
Condiments
1 Tblsp balsamic vinegar
Pasta & Grains
500 g Fusilli
Baking & Spices
2 tsp Salt
Oils & Vinegars
1 Olive oil

25 g 2-4 tblsps of butter
3 Dessertspoons of mascarpone, heaping
