This Zuppa Toscana soup was inspired by Olive Garden's famous recipe and given a healthier update. This hearty soup is easy to make and loaded with kale and potatoes.
Ingredients

2 Italian sausages, vegan

7 Baby yellow potatoes or 3 russet potatoes
4 cloves Garlic
1 bunch Kale
1 Yellow onion
Canned Goods
1 can Coconut milk
32 oz Vegetable stock
Baking & Spices
1 tbsp Flour
1 tbsp Italian seasoning blend
1/4 tsp Red pepper flakes
1 Salt and pepper
Oils & Vinegars
2 tbsp Olive oil, extra virgin
