Vegetarian French Onion Soup

Who says French Onion Soup can’t be JUST as good when vegetarian? This easy recipe uses both red and white onions for a bold flavour! An absolutely delicious take on a classic which won’t leave you disappointed!
Ingredients
∙ Serves 4-6

2 Bay leaves
2 Cloves Garlic
3 Red onions (approx 700g), large
4 sprigs Thyme, Fresh
3 White onions (approx 700g), large
Baking & Spices
1/2 tsp Black pepper
1/2 tsp Salt
1 tsp Sugar
Oils & Vinegars
4 tbsp Olive oil
Bread & Baked Goods
1 French bread
Dairy
2 tbsp Butter
1 Swiss gruyere cheese
Beer, Wine & Liquor
1/2 cup White wine, dry
Other
8 cups (1.8 litres) low sodium vegetable stock (click here for a homemade version)
