Vegan zucchini boats with quinoa

These vegan zucchini boats with Asian-inspired quinoa and soy-sesame glaze are simple to make and delicious. They make a great gluten-free lunch or starter.
Ingredients

1/2 Chilli, hot red
1 handful Coriander, fresh
2 Garlic cloves
1 small knob Ginger
2 Spring onions
2 Zucchinis, medium
Condiments
2 1/2 tbsp Maple syrup
13 tsp Soy sauce
Pasta & Grains
2 2/3 cups Quinoa, dry
Baking & Spices
1/4 tsp Chinese five spice
1 Sesame seeds
Oils & Vinegars
1 tbsp Lime juice or rice vinegar
2 tsp Rice vinegar
1 tbsp Sesame oil, toasted
2 tbsp Vegetable oil
