Weeknight Vegan Pho

This vegan pho is just the ticket for beating back the Winter blues, which I’ve admittedly been grappling with ever since we lost an hour with the time change. I think I’ve made variations on this soup almost every night for the last month. It’s all I want to eat, and I’m ok with that.
