Vegan Cheezy Chorizo & Red Pepper Frittata

You won't believe this frittata is made without eggs! Filled with caramelised onions, red pepper, vegan chorizo, pesto and mozzarella-style cheese.

2 Chorizo style vegan sausages

280 g Tofu, firm

1 tbsp Balsamic vinegar

1/4 tsp Black pepper, ground
75 g Chickpea flour or gram flour
1 tbsp Coconut sugar or brown sugar
1 Red pepper, small
1 heaped tsp Salt, black
