Steamed Chicken with Black Fungus

Ingredients
∙ Serves 4
Meat
450 g On-the-bone chicken, fresh
Produce
30 g Ginger
1 tbsp Goji berries
Condiments
1 tbsp Oyster sauce
2 tbsp Soy sauce, light
Baking & Spices
1/2 tsp Corn flour
1 Salt
1 Some pepper
Oils & Vinegars
1 tbsp Sesame oil
Beer, Wine & Liquor
2 tbsp Shaoxing wine or ginger wine
Liquids
5 tbsp Water
Other
5 Dried red dates - cut into smaller pieces and remove seeds
15 g Dried lily buds - tied into a knot and soaked till soft for about 15 minutes
6 Dried shiitake mushrooms - soaked till soften and cut off the hard stems
